  • ¼ tsp black pepper
  • 1 tbsp olive oil

Glaze

  • ¼ cup maple syrup
  • 1 tbsp Dijon mustard
  • 1 tbsp apple cider vinegar
  • 1 clove garlic, minced

    Preheat Oven and Prep Pork

    Preheat your oven to 400°F (200°C). Pat the pork tenderloin dry with paper towels. Season all sides with salt and pepper.

    Sear Pork Tenderloin

    Heat olive oil in an oven-safe skillet (cast iron works great) over medium-high heat. Once shimmering, add the pork tenderloin and sear for 2-3 minutes per side, until browned and a crust has formed.

    Make the Glaze

    While the pork is searing, whisk together the maple syrup, Dijon mustard, apple cider vinegar, and minced garlic in a small bowl.

    Glaze and Roast

    Remove the skillet from the heat. Pour the maple glaze over the seared pork tenderloin, ensuring it's evenly coated. Transfer the skillet to the preheated oven.

    Finish Roasting

    Roast for 15-20 minutes, or until the internal temperature of the pork reaches 145°F (63°C).

    Rest and Serve

    Once cooked, remove the pork tenderloin from the oven and transfer it to a cutting board. Tent loosely with foil and let rest for 5-10 minutes. This allows the juices to redistribute. Slice into ½-inch thick medallions and serve with any pan drippings.
