  • 4 (6-ounce) salmon fillets with skin on
  • 1 tbsp olive oil
  • ½ tsp kosher salt
  • ¼ tsp black pepper

Creamy Tuscan Sauce

  • 2 tbsp unsalted butter
  • 4 cloves garlic, minced
  • ½ cup sun-dried tomatoes in oil, drained and thinly sliced
  • 1½ cups heavy cream
  • ½ cup chicken or vegetable broth
  • ½ cup grated Parmesan cheese
  • 3 cups fresh spinach, packed
  • ½ tsp dried Italian seasoning
  • ¼ tsp red pepper flakes (optional)
  • Salt and black pepper to taste

Garnish

  • 2 tbsp fresh parsley, chopped

    Prepare Salmon

    Pat the salmon fillets dry with paper towels. Season both sides with kosher salt and black pepper.

    Sear Salmon

    Heat olive oil in a large skillet over medium-high heat. Once shimmering, add the salmon fillets skin-side down. Cook for 4-5 minutes until the skin is crispy and golden. Flip the salmon and cook for another 3-4 minutes, or until the internal temperature reaches 145°F (63°C). Remove salmon from the skillet and set aside.

    Sauté Aromatics

    Reduce heat to medium. Add butter to the same skillet. Once melted, add minced garlic and sun-dried tomatoes. Sauté for 1-2 minutes until fragrant.

    Build the Creamy Sauce

    Pour in the heavy cream and chicken broth. Stir in the Italian seasoning and red pepper flakes (if using). Bring the sauce to a gentle simmer, stirring occasionally, and let it thicken slightly for about 3-4 minutes.

    Add Spinach and Cheese

    Stir in the fresh spinach and Parmesan cheese. Cook, stirring constantly, until the spinach wilts and the cheese is fully melted and incorporated into the sauce, about 2 minutes. Taste and adjust seasoning with salt and pepper as needed.

    Combine and Serve

    Return the seared salmon fillets to the skillet, nestling them into the creamy Tuscan sauce. Spoon some of the sauce over the salmon. Garnish with chopped fresh parsley and serve immediately.
