Ingredients
Gather everything before you start cooking.
Proteins
- 4 large eggs
- 4 oz cooked chicken, shredded or diced
- 4 oz cooked turkey, shredded or diced
Dairy
- 2 oz jalapeño cream cheese, softened
- 1 oz cream cheese, softened
- 2 tbsp grated Parmesan cheese
- 2 tbsp shredded sharp cheddar cheese
- 2 tbsp shredded Monterey Jack cheese
- 1 tbsp butter or olive oil
Vegetables & Aromatics
- 1 fresh jalapeño, thinly sliced (remove seeds for less heat)
- 2 tbsp chopped red onion (optional)
- 1 clove garlic, minced (optional)
Spices & Seasoning
- 1/4 tsp smoked paprika
- 1/4 tsp garlic powder
- Salt and freshly ground black pepper to taste
- Pinch of red pepper flakes (optional, for extra heat)
Garnish (Optional)
- Fresh cilantro or chives, chopped
- Diced avocado

Prepare Fillings
If not already cooked, cook chicken and turkey. Shred or dice. Slice jalapeño (removing seeds and membranes for less heat), and chop red onion and mince garlic if using.

Combine Cheeses
In a small bowl, combine softened jalapeño cream cheese, cream cheese, Parmesan, sharp cheddar, and Monterey Jack cheeses. Mix well until combined. This will be your cheesy filling.

Whisk Eggs
In a medium bowl, whisk the eggs with smoked paprika, garlic powder, salt, and pepper until light and frothy.

Sauté Aromatics (Optional)
Heat 1/2 tbsp butter or olive oil in an 8-10 inch non-stick skillet over medium heat. If using, add red onion and garlic, and sauté for 2-3 minutes until fragrant. Add the sliced jalapeño and cook for another 1-2 minutes.

Cook Chicken & Turkey
Add the shredded chicken and turkey to the skillet with the sautéed vegetables. Heat through for about 2-3 minutes.

Cook Omelet Base
Melt the remaining 1/2 tbsp butter in the same skillet over medium-low heat. Pour half of the whisked egg mixture into the skillet. Let it cook undisturbed for 2-3 minutes, gently pushing the cooked edges towards the center and tilting the pan to let the uncooked egg flow underneath until mostly set but still slightly wet on top.

Fill the Omelet
Spoon half of the cheesy filling onto one half of the omelet. Top with half of the chicken, turkey, and jalapeño mixture. Cook for another 1-2 minutes to allow the cheese to melt slightly.

Fold and Serve
Carefully fold the other half of the omelet over the filling. Cook for an additional minute. Slide the omelet onto a plate. Repeat steps 6-8 for the second omelet. Garnish with fresh cilantro or chives and diced avocado if desired.
