In a large bowl, whisk together the all-purpose flour, granulated sugar, baking powder, baking soda, and salt. Ensure there are no lumps.

Combine Wet Ingredients
In a separate medium bowl, whisk together the buttermilk, milk, melted butter, and egg until well combined.

Combine Wet and Dry
Pour the wet ingredients into the dry ingredients. Stir gently with a whisk or rubber spatula until just combined. A few lumps are okay; do not overmix, as this will result in tough pancakes.

Heat Skillet and Cook First Batch
Heat a lightly oiled or buttered skillet or griddle over medium heat. Once hot, pour about ¼ cup of batter per pancake onto the skillet. Cook for 2-3 minutes per side, or until golden brown and bubbles form on the surface, and the edges look set. The internal temperature should be 200-205°F (93-96°C).

Cook Remaining Batches
Repeat with the remaining batter, adding more butter or oil to the skillet as needed. Keep cooked pancakes warm in a low oven (around 200°F / 93°C) while you finish cooking.
