Gather everything before you start cooking.
Shrimp
- 1 lb (450g) large shrimp, peeled and deveined, tails on
- ½ cup (60g) cornstarch
- 1 large egg, whisked
- ½ tsp kosher salt
- ¼ tsp black pepper
- Cooking spray
Bang Bang Sauce
- ½ cup (120ml) mayonnaise
- ¼ cup (60ml) sweet chili sauce
- 1 tbsp Sriracha (adjust to taste for spice)
- 1 tbsp lemon juice
Garnish
- 2 tbsp chopped fresh chives or green onions
- 1 tsp sesame seeds

Prepare the Shrimp
Pat the shrimp dry thoroughly with paper towels. In a medium bowl, whisk the egg. In another shallow bowl, combine the cornstarch, salt, and pepper. Dip each shrimp first into the egg wash, then dredge in the cornstarch mixture, ensuring it's fully coated. Place the coated shrimp on a plate.

Preheat Air Fryer & Arrange Shrimp
Preheat your air fryer to 375°F (190°C) for 3 minutes. Lightly spray the air fryer basket with cooking spray. Arrange the coated shrimp in a single layer in the air fryer basket, ensuring not to overcrowd. You may need to cook in batches.

Air Fry the Shrimp
Lightly spray the tops of the shrimp with cooking spray. Air fry for 8-10 minutes, flipping halfway through, until the shrimp are golden brown and cooked through. Ensure an internal temperature of 145°F (63°C).

Make the Bang Bang Sauce
While the shrimp are cooking, prepare the Bang Bang sauce. In a medium bowl, whisk together the mayonnaise, sweet chili sauce, Sriracha, and lemon juice until smooth and well combined.

Combine & Serve
Once all the shrimp are cooked, transfer them to a large bowl. Pour the Bang Bang sauce over the shrimp and gently toss to coat evenly. Garnish with chopped chives or green onions and sesame seeds. Serve immediately.
