  • 4 servings ramen noodles (fresh or dried)
  • 4 cups chicken broth
  • 2 cups water
  • 4 tablespoons soy sauce
  • 2 tablespoons mirin
  • 1 tablespoon sesame oil
  • 1 tablespoon chili garlic sauce (or to taste)
  • 1 inch ginger, grated
  • 2 cloves garlic, minced

Garnish

  • 4 soft-boiled eggs, halved
  • 4 sheets nori, cut into quarters
  • 2 green onions, thinly sliced
  • 1 tablespoon toasted sesame seeds
  • Chili threads or a drizzle of chili oil (optional)

    Prepare Aromatics and Pork

    In a large pot or Dutch oven, heat the sesame oil over medium-high heat. Add the ground pork and break it up with a spoon. Cook until browned and crispy, about 5-7 minutes. Drain excess fat.

    Add the grated ginger, minced garlic, and chili garlic sauce to the pot with the pork. Sauté for 1 minute until fragrant. Pour in the chicken broth, water, soy sauce, and mirin. Bring the mixture to a boil, then reduce heat to low and simmer for 10 minutes to allow the flavors to meld. Skim any foam from the surface.

    While the broth simmers, cook the ramen noodles according to package directions. Drain well and set aside.

    Divide the cooked noodles among four serving bowls. Ladle the hot broth and pork mixture over the noodles. Arrange the soft-boiled egg halves, nori, and sliced green onions on top of each bowl. Garnish with toasted sesame seeds and optional chili threads or chili oil.
