  • 1 large sweet potato (about 1½ lbs), peeled and diced into ½-inch cubes
  • 1 tbsp olive oil
  • ½ tsp chili powder
  • ½ tsp cumin
  • ¼ tsp smoked paprika
  • ¼ tsp salt
  • ⅛ tsp black pepper
  • 1 (15-ounce) can black beans, rinsed and drained
  • 12 small corn or flour tortillas

Avocado Crema

  • 1 ripe avocado, pitted
  • ½ cup non-dairy plain yogurt or sour cream
  • 2 tbsp lime juice
  • 2 tbsp fresh cilantro, chopped
  • ¼ tsp salt

Optional Toppings

  • ¼ cup red onion, finely diced
  • ¼ cup fresh cilantro, chopped
  • 2 tbsp cotija cheese or vegan queso fresco (crumbled)

    Roast Sweet Potatoes

    Preheat oven to 400°F (200°C). On a baking sheet, toss the diced sweet potato with olive oil, chili powder, cumin, smoked paprika, salt, and pepper until evenly coated. Spread in a single layer and roast for 20 minutes, or until tender and lightly caramelized. Do not disturb the potatoes during roasting to allow for proper caramelization.

    Prepare Avocado Crema

    While the sweet potatoes are roasting, combine the avocado, non-dairy yogurt or sour cream, lime juice, cilantro, and salt in a small food processor or blender. Blend until smooth and creamy. Taste and adjust seasoning if needed. If too thick, add a touch of water or more lime juice.

    Warm Black Beans

    After the sweet potatoes have roasted for 10 minutes, add the rinsed and drained black beans to the same baking sheet, gently mixing them in with the sweet potatoes. Continue roasting for the remaining 10 minutes, allowing the beans to warm through and absorb the flavors.

    While the beans and sweet potatoes finish roasting, warm the tortillas. You can do this by wrapping them in a damp paper towel and microwaving for 30-60 seconds, or by heating them in a dry skillet over medium heat for about 30 seconds per side until pliable and slightly charred.
