Ingredients

Gather everything before you start cooking.

Main

  • 1½ lb ground chicken
  • 2 tbsp vegetable oil
  • 1 large yellow onion, thinly sliced
  • 4-5 cloves garlic, minced
  • 3-5 Thai bird's eye chilies, minced (adjust to spice preference)
  • 1 cup fresh Thai basil leaves, packed

Sauce

  • 2 tbsp oyster sauce
  • 1 tbsp fish sauce
  • 1 tbsp dark soy sauce
  • 1 tsp sugar
  • ¼ cup chicken broth or water

For Serving (Optional)

  • 4 cups jasmine rice, cooked
  • 4 fried eggs

Steps

  1. 1

    Prepare the Sauce

In a small bowl, whisk together the oyster sauce, fish sauce, dark soy sauce, and sugar. Add the chicken broth or water and mix until well combined. Set aside.

    ~2 min

  2. 2

    Sauté Aromatics

Heat the vegetable oil in a large skillet or wok over medium-high heat. Add the sliced onion and stir-fry for 2 minutes until softened. Add the minced garlic and chilies and continue to stir-fry for 1 minute until fragrant. Be careful not to burn the garlic.

    ~3 min

  3. 3

    Cook the Chicken

Add the ground chicken to the skillet. Break it apart with a spoon and cook, stirring occasionally, until it is no longer pink and is fully cooked through. This should take about 5-7 minutes. Ensure the ground chicken reaches an internal temperature of 165°F (74°C).

    ~7 min

  4. 4

    Combine with Sauce

Pour the prepared sauce over the cooked chicken and aromatics. Stir well to coat all the ingredients evenly. Bring the sauce to a gentle simmer and cook for 1-2 minutes, allowing it to thicken slightly.

    ~2 min

  5. 5

    Add Basil

Remove the skillet from the heat. Add the fresh Thai basil leaves and stir them into the chicken mixture until they just wilt, for about 30 seconds. Do not overcook the basil, as it will lose its vibrant flavor and color.

    ~1 min

  6. 6

    Serve

Serve immediately over hot jasmine rice. For an authentic touch, top each serving with a fried egg.
