Ingredients

Gather everything before you start cooking.

Main

  • 1 tablespoon olive oil
  • 1½ pounds ground beef, 80/20
  • 1 large yellow onion, diced
  • 2 cloves garlic, minced
  • 1 (28 ounce) can crushed tomatoes
  • 1 (15 ounce) can kidney beans, rinsed and drained
  • 1 (15 ounce) can black beans, rinsed and drained
  • 1 (4 ounce) can diced green chiles
  • 1 cup beef broth
  • 2 tablespoons chili powder
  • 1 tablespoon ground cumin
  • 1 teaspoon smoked paprika
  • ½ teaspoon dried oregano
  • ¼ teaspoon cayenne pepper (optional, for heat)
  • 1 teaspoon salt
  • ½ teaspoon black pepper

For Serving (Optional)

  • Shredded cheddar cheese
  • Sour cream
  • Chopped fresh cilantro
  • Diced red onion
  • Corn chips or cornbread

    Sauté Beef and Aromatics

    Set your Instant Pot to 'Sauté' mode. Once hot, add the olive oil. Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes. Drain any excess fat. Add the diced yellow onion and minced garlic to the pot and sauté until softened, about 3-4 minutes.

    Add Remaining Ingredients and Spices

    Stir in the crushed tomatoes, kidney beans, black beans, diced green chiles, and beef broth. Add the chili powder, ground cumin, smoked paprika, dried oregano, cayenne pepper (if using), salt, and black pepper. Stir well to combine all ingredients.

    Pressure Cook the Chili

    Secure the lid on the Instant Pot and set the vent to the 'Sealing' position. Select 'Manual' or 'Pressure Cook' and set the cooking time to 20 minutes on high pressure. The Instant Pot will take about 10-15 minutes to come to pressure.

    Natural Release and Serve

    Once the cooking time is complete, allow for a natural pressure release for 10 minutes. After 10 minutes, carefully switch the vent to the 'Venting' position for a quick release of any remaining pressure. Open the lid, stir the chili, and taste for seasoning, adjusting if necessary.
