- 1 tablespoon sake
- 1 tablespoon soy sauce
- 1 teaspoon grated fresh ginger
- 1 clove garlic, minced

- 1/2 teaspoon sugar

Prepare the Miso Glaze
In a small bowl, whisk together the white miso paste, mirin, sake, soy sauce, grated fresh ginger, minced garlic, sesame oil, and sugar until well combined and smooth.

Marinate the Cod
Pat the cod fillets dry with paper towels. Place them in a shallow dish and pour the miso glaze over the cod, ensuring each fillet is evenly coated. Cover the dish and refrigerate for at least 15 minutes, or up to 30 minutes. Do not marinate for longer, as the miso can start to cure the fish.

Preheat Oven and Prepare Baking Sheet
Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper or aluminum foil for easy cleanup.

Bake the Cod
Remove the cod from the marinade, letting any excess glaze drip off. Place the fillets, skin-side down (if applicable), on the prepared baking sheet. Bake for 10-15 minutes, or until the fish is opaque and flakes easily with a fork. The internal temperature should reach 145°F (63°C).
