Grits
- 2 cups chicken broth
- 2 cups water
- 1 cup quick-cooking grits (not instant)
- 1/2 cup heavy cream
- 4 oz sharp cheddar cheese, shredded
- 2 tbsp unsalted butter
- 1/2 tsp kosher salt
- 1/4 tsp black pepper
Blackened Shrimp
- 1½ lb large shrimp, peeled and deveined (about 31-40 count)
- 2 tbsp olive oil
- 2 tsp smoked paprika
- 1 tsp garlic powder
- 1 tsp onion powder
- 1 tsp dried oregano
- 1/2 tsp cayenne pepper
- 1/2 tsp black pepper
- 1/2 tsp kosher salt
Garnish
- 2 tbsp fresh parsley, chopped
- 1 lemon, cut into wedges

Prepare the Grits
In a medium saucepan, combine chicken broth and water. Bring to a boil over medium-high heat. Gradually whisk in the quick-cooking grits, reducing heat to low. Stir frequently to prevent sticking, and cook until the grits are thick and creamy, about 10-12 minutes.

Finish the Grits
Once the grits are cooked, remove the saucepan from the heat. Stir in the heavy cream, shredded cheddar cheese, unsalted butter, salt, and pepper until the cheese is melted and the grits are smooth and well combined. Cover to keep warm.

Season the Shrimp
While the grits are cooking, pat the peeled and deveined shrimp dry with paper towels. In a medium bowl, combine the smoked paprika, garlic powder, onion powder, dried oregano, cayenne pepper, black pepper, and salt. Add the shrimp to the bowl and toss to ensure they are evenly coated with the seasoning blend.

Blacken the Shrimp
Heat olive oil in a large cast-iron skillet or heavy-bottomed pan over medium-high heat until it shimmers. Add the seasoned shrimp in a single layer, being careful not to overcrowd the pan. Cook for 1-2 minutes per side, or until the shrimp are opaque, pink, and lightly charred. Cook in batches if necessary.

Plate and Garnish
Divide the creamy grits among four bowls. Top each serving with the blackened shrimp. Garnish generously with fresh chopped parsley and a lemon wedge for squeezing over the shrimp.
