  • 1½ lb boneless, skinless chicken breasts or thighs
  • 1 (28 oz) can crushed tomatoes
  • 1 (15 oz) can black beans, rinsed and drained
  • 1 (15 oz) can corn, drained
  • 1 large onion, chopped
  • 3 cloves garlic, minced
  • 1 (4 oz) can diced green chiles
  • 4 cups chicken broth
  • 1 tbsp chili powder
  • 1 tsp cumin
  • ½ tsp smoked paprika
  • ¼ tsp cayenne pepper (optional, for extra heat)
  • 1 tsp Kosher salt
  • ½ tsp black pepper

For Serving

  • 2 cups tortilla chips, crushed
  • 1 cup shredded Monterey Jack or cheddar cheese
  • ½ cup fresh cilantro, chopped
  • 2 ripe avocados, diced
  • ½ cup sour cream or Greek yogurt
  • 2 limes, cut into wedges

    Combine Ingredients

    Add the chicken breasts or thighs to the slow cooker insert. Top with crushed tomatoes, black beans, corn, chopped onion, minced garlic, diced green chiles, and chicken broth. Stir in chili powder, cumin, smoked paprika, cayenne pepper (if using), salt, and black pepper. Stir everything well to combine.

    Slow Cook

    Cover the slow cooker and cook on low for 6 hours or on high for 3-4 hours, until the chicken is cooked through and very tender. Chicken should reach an internal temperature of 165°F (74°C).

    Shred Chicken

    Carefully remove the cooked chicken from the slow cooker and place it on a cutting board. Using two forks, shred the chicken into bite-sized pieces. Return the shredded chicken to the slow cooker and stir to combine with the soup.
